Independently assessed by the Royal Institute of Public Health. ‘Basic Food Hygiene’ is an authoritative Level 2 food hygiene programme specifically designed for food handlers.
This EduCare programme is delivered in five user-friendly learning sections. Each section has a questionnaire to test understanding and a worksheet that allows participants to put their knowledge into practice in the workplace and is available either paper-based or online. On successful completion of the final proficiency test, participants will receive a personalised certificate.
Section 1 – Food borne illness bacteria & prevention
Learn about the different kinds of food-borne illness; bacteria – the good and the bad and the high risk foods and allergies.
Section 2 – Contamination spoilage & prevention of food poisoning
Explore the different kinds of contamination: microbiological, physical, chemical; where contamination can occur; how to control contamination and spoilage and a guide to safe temperatures.
Section 3 – Effective hygiene
Learn about the importance of personal hygiene; keeping premises and equipment clean; food pests and bad habits and effective cleaning and disinfecting.
Section 4 – Storage, HACCP and the law
Examine how food is delivered and stored; useful tips for good storage practice; the importance of HACCP (Hazard, Analysis & Critical Control Point) and the law and regulations.
Section 5 – Proficiency test
Reinforces your knowledge over the whole programme
In order to complete the programme successfully you must complete the proficiency paper at the end of the programme, if you answer 70% on the proficiency test you will receive a personalised certificate, feedback detailing your scores for each section and a set of answer explanations.
